Whole Wheat Gold Fish Crackers
The recipe came from one of my favorite source, Smitten Kitchen. I am really not a fan of the Pepperidge Farm gold fish crackers in general. They are too salty and not very interesting. Perhaps they have tastier and healthier variety now. I don't know, I never buy them.
The idea of making my own gold fish healthier and less salty is appealing to me. I also thought it would be fun to make cookies with my girls, who will be two years old in a month. Smitten Kitchen's recipe is extremely easy: throw everything in the food processor and grind for 1-2 minutes until a dough ball forms. The most time consuming part was grating the cheese and making tiny cut outs. Pre-grated cheese is probably acceptable if you don't mind. The dough was very easy to cut out, even after the dough was re-worked and had been sitting at room temperature for a while. I used a set of tiny cutters from Ateco. The resulting crackers were adorable and my girls loved it. I thought the crackers were still on the salty side, but this would depend on the specific cheese use. Next time I might skip the salt completely.
